Which fatty acids are present in the oils and fats you consume?

Whether it is coconut oil or lard, each fat consists of fatty acids. These fatty acids can be small and large, saturated and unsaturated. Most oils and fats have a mix of different fatty acids. To make oils and fats more confusing, each fat or oil can consist of different fatty acids depending on its environment.

Although situations are unique for each fat, there are some generalizations we can make. These generalizations are:

  • the colder the organism, the more unsaturated the fat
  • the less light in the environment, the more unsaturated the fat
  • less CO2, the more unsaturated the fat

This means that tropical fats and fats in warm organisms are more saturated than cold organisms and colder environments.
